Masala Omlette

This is my last resort, when I do not feel like cooking at all. To be honest, it is perfectly Ok to not feel like doing or cooking anything on specific days. But, don't forget to keep yourself sane, for your general well being. Eggs are a rich source of protein and an instant energy booster.


Pair the Omlette with toasted bread and and a cup of coffee. And Relax.

Sharing the recipe below:



RECIPE:


Servings: 2 people

Preparation Time: 10 Minutes

Cooking Time: 20 Minutes


Ingredients:

  1. 3 eggs

  2. 1 medium size tomato, finely chopped

  3. 1 medium size onion, finely chopped

  4. 1 tbsp. chopped garlic

  5. 100 Gms spinach, finely chopped

  6. Freshly chopped coriander leaves

  7. 1 green chilly

  8. Salt

  9. Pepper

  10. Oil for frying



STEPS:


Step 1: In a bowl, break and put the eggs. Add salt, finely chopped green chilly, and pepper. Whisk until the eggs become frothy.

Step 2: In a pan, add oil. When the oil smokes, add the chopped onions, fry till golden brown. Now add the chopped garlic and fry for 2 minutes.

Step 3: Add the chopped spinach and the tomatoes. Add a little salt. Cover with a lid, on low flame, and cook for 2 minutes, until the spinach leaves water.

Step 4: Open the lid. Give the vegetables a nice stir, and spread it evenly on the pan. Now pour the whisked eggs on top, covering the vegetables. Sprinkle the chopped coriander leaves. Lower the flame and cook with the lid on for 5-7 minutes.

Step 5: Open the lid. Flip the omlette, cook on the other side for 3 minutes, on medium high flame.


Serve along with bread toast, or just have it like that, with a glass of Citrus fruit punch.
