This is an essential spice mix that is made and stored in every Bengali household. It is used in many of the vegetarian and non vegetarian recipes in the Bengali cuisine. It can be used as a replacement for the Garam Masala.


This spice mix works the best, when added after the entire cooking process is complete, as a seasoning.


Over cooking the masala, might lead to a bitter taste.

RECIPE:


Ingredients:

  1. 10 Gms Cloves

  2. 10 Gms Dry Coriander Seeds

  3. 10 Gms Cinnamon Sticks

  4. 10 Gms Cardamom

Steps:


Step 1: On a pan, dry roast the ingredients, one by one and keep aside on a plate. Let cool.

Step 2: When the spices have reached a room temperature. Dry grind them in a grinder. Store in a air tight container.


This ground mix can be preserved and used for a month.
