Khoya, also known as Khova, is reduced milk solids. It is a very commonly used ingredient in making Indian Sweets, and Curries. You get this ready in market as well from multiple brands. But in case you wish to create a recipe right from the scratch. You can try making this at home.

RECIPE:


Ingredients: 2 Liters Milk


STEPS:


Step 1: Take a heavy base pan. Pour the milk. Boil on high flame.

Step 2: Once you get a full boil. Reduce the flame on low and cook the milk with frequent stirrings while the milk simmers.

Step 3: Frequently scrape the sides of the pan and mix the scraped milk solids with the rest of the milk.

Step 4: When you start to see only bubbles, along with the reduced milk. Stir continuously on medium high flame.

Step 5: Put off the flame, and let cool.

Step 6: Once it cools completely. Scrape the pan from the sides and mix it with the mixture.


Use full cream milk for the khoya preparation, to get a good consistency.
